Bleu Cheese Duck Fajita Wraps-An “After The Hunt” Culinary Delight
Start with a day like this:
Clean em, and put the honkers in a brine for later smoking. Keep the ducks fresh and cube them into 1/2 inch cubes. Keep them 1/2 inch cubes because we are only going to be frying them for mere seconds.
You wil need:
1 Pack Fajita seasoning (I prefer McCormick’s but any kind will do)
6 duck breasts
1 can Black Beans
1 Tablespoon Olive Oil
1 Container Crumbled Bleu Cheese
1 Cup to 1 1/2 cups of shredded cheese (I like any kind of Jack Cheese)
Flour Tortillas
1 or 2 Jalapeno
Black Olives
Tomatoes
Onions
Sour Cream
After I have cubed the duck breasts, I toss them in the Fajita seasoning before I put them in the pan. I turn the stove top on high and get the frying pan sizzling hot and add a tablespoon of Olive oil. Next I dump in the duck breast cubes and let them sear and turn them constantly so the outsides don’t burn, but I want them rare to medium rare. Usually this is no longer than a minute to a minute and a half.
In a separate pan I will heat the Black beans as they may have to cook longer to get sufficiently hot and I don’t want to cook the duck that long.
I will have the tortillas ready with a bed of shredded cheese and bleu cheese crumbles ready to receive the HOT cubes. Once I top the cheeses with the cubed Duck breasts I then add the other toppings and roll the tortillas. After the Tortillas are rolled and pinned, I top them with Sour Cream and Presto!
They are AWESOME!!!!!!!
